This cool and crisp salad offers many variations keeping it new and flavorful every time you prepare it.
Ingredients:
- 3 large cucumbers, thinly sliced
- 1/4 cup rice vinegar
- 1 tablespoon white sugar
- 1 teaspoon crushed red pepper
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
Preparation:
- Mix liquid ingredients and crushed pepper in a medium mixing bowl.
- Add cucumbers and bell pepper. Mix gently.
- Chill for at least one hour before serving.
Variations:
- Add freshly squeezed lemon juice to taste.
- Add one large avocado, diced into small cubes, during Step 2.
- Add one diced red bell pepper during Step 2.
- Add one diced celery sticks during Step 2.
- Add tomato slices.
