Cucumber Salad

This cool and crisp salad offers many variations keeping it new and flavorful every time you prepare it.Cucumber_Salad

Ingredients:

  • 3 large cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 1 tablespoon white sugar
  • 1 teaspoon crushed red pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil

Preparation:

  1. Mix liquid ingredients and crushed pepper in a medium mixing bowl.
  2. Add cucumbers and bell pepper. Mix gently.
  3. Chill for at least one hour before serving.

Variations:

  • Add freshly squeezed lemon juice to taste.
  • Add one large avocado, diced into small cubes, during Step 2.
  • Add one diced red bell pepper during Step 2.
  • Add one diced celery sticks during Step 2.
  • Add tomato slices.
  • Sprinkle with sesame seeds before serving.
