Asian Coleslaw with Miso Mustard Dressing puts a refreshing twist on cabbage salad.
Serves 4
Ingredients:
- 1 medium white cabbage
- 1 onion
- ½ cup sweet yellow miso
- ½ cup sake
- 1 cup mirin
- 2 teaspoon caster sugar
- 1 tablespoon honey mustard
- 1 tablespoon rice vinegar
- Salt and pepper
- 4 tablespoons toasted sesame seeds
Preparation:
- Finely shred the cabbage and the onion.
- Soak them in iced water for a few minutes, dry in a salad spinner and put in a bowl in the refrigerator for thirty minutes to one hour.
- This has the effect of crisping the cabbage and onions.
- To make the miso mustard dressing, combine the sake, mirin, sugar and miso in a saucepan over a medium heat.
- When it comes to a boil lower the heat and allow to simmer for a further 10 minutes, stirring to ensure that it does not burn.
- Remove from the heat, and when cool add the honey mustard, vinegar and seasoning.
- Toss the cabbage and onion in the dressing, and serve the salad topped with toasted sesame seeds.
