Ginger Sauteed Pork is a flavorful dish that will soon become a house favorite for family meals.
Serves 4
Ingredients:
- 1lb pork fillet
- 1 heaped tablespoon freshly grated ginger
- 6 heads bok choy
- 3 tablespoons shoyu
- 2 tablespoons mirin
- Vegetable oil for frying
- Salt and pepper
Preparation:
- Slice the pork as thinly as possible. Wrap the slices in greaseproof paper, and beat them with a rolling pin to make them thinner and tenderer.
- Remove them from the wrapping and keep at room temperature.
- Combine the shoyu and the mirin in a small bowl and add the grated ginger.
- Prepare the bok choy by separating the white stems from the green and cutting the stems in half lengthwise, and the leaves in half diagonally.
- Add oil to a wok and stir-fry briefly over a high heat. Remove from heat, season, and arrange on the serving dish.
- Immerse the pork slices briefly in the shoyu, ginger and mirin mixture, then transfer to the hot frying pan and brown quickly.
- To ensure the meat browns well it is best to fry it in 2 or 3 batches so as to have enough room in the pan.
- Serve immediately on the bed of bok choy.
