Nikujaga is a Japanese dish containing meat and potatoes that will leave you feeling full and satisfied.
Serves 4
Ingredients:
- 12oz beef or pork loin
- 8 waxy potatoes
- 2 onions, peeled and cut into wedges
- 2 carrots peeled and cubed
- 2 inches ginger, peeled and finely grated
- 4 cups dashi
- 4 tablespoons mirin
- 3 tablespoons sugar
- 4 tablespoons shoyu
- 1 tablespoon vegetable oil
Preparation:
- Slice the meat finely, and then cut into thin strips
- Heat the vegetable oil in a pan and sauté the meat over a gently heat until it browns.
- Add the onion, carrot, ginger and potatoes and sauté together.
- Pour over the dashi and bring to the boil.
- Turn the heat down to simmering point and add the sugar, mirin and shoyu.
- Take some baking parchment and cut it into a circle of similar diameter to the pot.
- Place it so that it just touches the top of the stew. Put a lid on top of the pot.
- Allow to simmer for one hour or until the meat is tender.
