This easy to prepare recipe will leave you wanting more after your plate is cleared.
Ingredients:
- Raw vegetables (leeks, carrots, cabbage, spinach for example)
- 3 cups cold cooked Japanese rice
- Juice of half a lemon
- 1 tablespoon tamari
- 1 block silken tofu
- 1 cup sesame seeds
- Vegetable oil
Dipping sauce:
- 2 tablespoons tamari
- 2 tablespoons mirin
Preparation:
- Finely chop the chosen mixture of vegetables. The end quantity should be 1 cup.
- Combine the rice and vegetables in a bowl, add the lemon juice and tamari.
- Drain the tofu, and dry it with kitchen paper. Mash it with a fork until smooth and add to the rice mixture.
- With wet hands roll the mixture into golf ball sized balls and flatten slightly. Roll the balls in sesame seeds.
- Heat the oil in a frying pan to a depth of 1cm.
- In batches of 6 at a time fry the rice balls until crisp and golden, turning once to brown both sides.
- Serve warm with the dipping sauce.
